The holiday season is officially upon us! I have always said pork is the other white meat. I enjoy pork chops, loin, ribs, bacon and belly. Pork loin is a delicious cut of the meat, my sister Foodieengineer  and I will make this quick healthy dish for our family to eat over the holidays while we are all together. Many of you know that I live in Chicago, my sister Alycia AKA Foodieengineer lives in New Jersey and my parents live in Michigan. During Christmas and New Year’s we will all be in the same household. Here is a great pork loin recipe with roasted vegetables and fake mashed potatoes (also known as mashed cauliflower). The great thing about this meal is that it is quick and healthy. I understand that time is just as important as health when it comes to preparing meals for your family.

I cook like your grandma I use handfuls for my seasonings not measuring cups and spoons.
