I made the healthiest banana pancakes this morning!!  I always say that a GREAT pancake does not need any syrup and I ate these completely DRY! Teff flour is a whole grain that is usually found in Ethiopia. I went to a Ethiopian grocery store to purchase it but I am told that it is also sold at Whole Foods and Bob’s Red Mill distributes it as well. I am allergic to many whole grains so I was excited to hear about this on Dr Oz. This is a great way to enjoy pancakes without the guilt. You can substitute any fruit you would like to make these pancakes.

1 1/2  cups Teff Flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1 1/2 cups water

3 Tablespoon Coconut Oil

3 Tablespoon Agave Nectar (Light)

3 Ripe Bananas mashed

Mix all the dry ingredients and then add all the wet ingredients. Drop by 1/4 cup onto griddle makes 14 pancakes. ENJOY!!
